Description

A warm, comforting blueberry French toast bake that’s easy to prep ahead and perfect for busy mornings or weekend brunch.


Ingredients

  • 810 slices of brioche or French bread
  • 6 large eggs
  • 2 cups milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ cup maple syrup
  • 2 cups blueberries (fresh or frozen)
  • Pinch of salt
  • Butter for greasing


Instructions

  1. Cube bread and layer with blueberries in a greased baking dish.
  2. Whisk eggs, milk, vanilla, cinnamon, syrup, and salt.
  3. Pour over bread, press gently, soak for 30+ minutes or overnight.
  4. Bake at 350°F covered for 30 mins, then uncovered for 20–25 mins.
  5. Cool slightly and serve warm with toppings of choice.

Notes

Use stale bread for best texture. Add lemon zest, nuts, or cream cheese for variations.
