Description
A warm, comforting blueberry French toast bake that’s easy to prep ahead and perfect for busy mornings or weekend brunch.
Ingredients
- 8–10 slices of brioche or French bread
- 6 large eggs
- 2 cups milk
- 2 tsp vanilla extract
- 1 tsp cinnamon
- ¼ cup maple syrup
- 1½–2 cups blueberries (fresh or frozen)
- Pinch of salt
- Butter for greasing
Instructions
- Cube bread and layer with blueberries in a greased baking dish.
- Whisk eggs, milk, vanilla, cinnamon, syrup, and salt.
- Pour over bread, press gently, soak for 30+ minutes or overnight.
- Bake at 350°F covered for 30 mins, then uncovered for 20–25 mins.
- Cool slightly and serve warm with toppings of choice.
Notes
Use stale bread for best texture. Add lemon zest, nuts, or cream cheese for variations.
