Ingredients
Scale
Cracker Dough:
- 1 cup (120g) sharp cheddar cheese, shredded
- ¼ cup (30g) Parmesan cheese, finely grated
- ¾ cup (90g) all-purpose flour
- ¼ teaspoon baking powder
- ¼ teaspoon garlic powder (optional)
- ¼ teaspoon sea salt
- 3 tablespoons (45g) unsalted butter, cold and cubed
- 2 to 3 tablespoons ice-cold water
Optional Toppings:
- Extra shredded cheddar or Parmesan
- Smoked paprika or cayenne for heat
- Sesame seeds or coarse salt for added texture
Instructions
Step 1: Prepare the Dough
- In a food processor or mixing bowl, combine flour, baking powder, sea salt, and garlic powder (if using). Pulse or whisk until evenly mixed.
- Add shredded cheddar, grated Parmesan, and cubed butter. Pulse until the mixture becomes crumbly.
- Gradually add ice water, one tablespoon at a time, mixing until the dough holds together when pinched. Avoid overmixing.
Step 2: Shape the Crackers
- Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Lightly flour a clean surface and roll out the dough to approximately ⅛-inch thick.
- Cut into squares, rectangles, or desired shapes using a sharp knife or cookie cutter.
- If desired, sprinkle extra cheese, paprika, or sesame seeds on top for additional flavor.
Step 3: Bake Until Golden
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Arrange crackers on the prepared baking sheet, leaving space between each piece.
- Bake for 12–15 minutes, or until the crackers are golden and crispy.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For Extra Crispy Crackers: Roll the dough as thin as possible and bake for an additional 1–2 minutes.
- Cheese Variations: Try Gouda, Gruyère, or a spicy pepper jack for different flavor profiles.
- Storage: Keep crackers in an airtight container at room temperature for up to a week. To restore crispness, reheat at 300°F (150°C) for a few minutes.
- Gluten-Free Option: Use a 1:1 gluten-free flour blend instead of all-purpose flour.
- Spicy Kick: Add a pinch of cayenne or red pepper flakes to the dough for a bit of heat.
