Description

These Costco-inspired stuffed bell peppers combine seasoned ground beef, rice, tomato sauce, and melted cheese in sweet red peppers. Perfect for meal prep or a quick dinner.


Ingredients

  • 6 large red bell peppers, halved and seeds removed
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef (85/15 preferred)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 ½ cups cooked white rice
  • 1 ½ cups marinara or tomato sauce (plus extra for topping)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • Fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Arrange peppers face up in a baking dish.
  2. Warm olive oil in a skillet over medium heat. Sauté onion 3–4 minutes, then add garlic for 30 seconds.
  3. Add ground beef, cooking until browned. Drain excess fat if needed.
  4. Stir in Italian seasoning, salt, pepper, rice, and sauce. Heat through.
  5. Spoon mixture into pepper halves. Add extra sauce if desired.
  6. Cover with foil and bake 30 minutes, then uncover and bake another 10–15 minutes.
  7. Garnish with parsley and serve hot.
