Description
These Costco-inspired stuffed bell peppers combine seasoned ground beef, rice, tomato sauce, and melted cheese in sweet red peppers. Perfect for meal prep or a quick dinner.
Ingredients
- 6 large red bell peppers, halved and seeds removed
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 lb ground beef (85/15 preferred)
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 1 ½ cups cooked white rice
- 1 ½ cups marinara or tomato sauce (plus extra for topping)
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated parmesan cheese
- Fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Arrange peppers face up in a baking dish.
- Warm olive oil in a skillet over medium heat. Sauté onion 3–4 minutes, then add garlic for 30 seconds.
- Add ground beef, cooking until browned. Drain excess fat if needed.
- Stir in Italian seasoning, salt, pepper, rice, and sauce. Heat through.
- Spoon mixture into pepper halves. Add extra sauce if desired.
- Cover with foil and bake 30 minutes, then uncover and bake another 10–15 minutes.
- Garnish with parsley and serve hot.
Notes
- Use cauliflower rice for a low-carb option.
- Store leftovers in the fridge for up to 4 days or freeze for 2 months.
