Description

This cottage cheese flatbread is soft, flexible, and high in protein—perfect as a low-carb wrap or a base for your favorite toppings.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup oat flour or almond flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • Optional spices (garlic powder, herbs)
  • Nonstick spray or olive oil

Instructions

  1. Blend Batter: Combine cottage cheese, eggs, and flour in a blender until smooth.
  2. Season and Mix: Add salt, baking powder, and optional spices. Blend again briefly.
  3. Heat Pan: Warm a non-stick skillet with a little oil or spray.
  4. Cook Flatbread: Pour batter and spread into a thin round. Cook 2–3 minutes per side until golden.
  5. Repeat: Continue with remaining batter. Serve warm or cooled.

Notes
