- 2 large eggs
- ¼ cup oat flour or almond flour
- ½ tsp baking powder
- ¼ tsp salt

- Nonstick spray or olive oil
Instructions
- Blend Batter: Combine cottage cheese, eggs, and flour in a blender until smooth.
- Season and Mix: Add salt, baking powder, and optional spices. Blend again briefly.
- Heat Pan: Warm a non-stick skillet with a little oil or spray.
- Cook Flatbread: Pour batter and spread into a thin round. Cook 2–3 minutes per side until golden.
- Repeat: Continue with remaining batter. Serve warm or cooled.
Notes
Batter can be made ahead and stored up to 2 days. Add cheese or herbs for flavor.
