Ingredients

- 8 oz (225g) pasta (fettuccine, penne, or rigatoni)
- 1 cup (240ml) heavy cream
- 4 oz (115g) Gorgonzola cheese, crumbled
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- ¼ cup (60ml) white wine (optional)
- ½ cup (50g) grated Parmesan cheese
- ¼ tsp salt (adjust as needed)
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
Garnish & Extras:
- ¼ cup chopped fresh parsley
- ¼ cup toasted walnuts (optional)
- Extra Parmesan cheese, for topping
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the pasta and cook until al dente, following the package instructions.
- Reserve ½ cup of pasta water, then drain and set pasta aside.
2. Prepare the Gorgonzola Sauce
- In a large skillet over medium heat, melt the butter until slightly bubbling.
- Add the minced garlic and cook for 30 seconds, stirring frequently.
- If using, pour in the white wine and let it simmer for 1-2 minutes until reduced.
3. Make the Creamy Cheese Sauce
- Reduce the heat to low and stir in the heavy cream.
- Add the crumbled Gorgonzola cheese, stirring until fully melted.
- Mix in the Parmesan cheese, salt, and black pepper.
- If the sauce is too thick, gradually add reserved pasta water until smooth.
4. Combine & Serve
- Add the cooked pasta to the sauce, tossing to coat evenly.
- Let it simmer for 1-2 minutes, allowing the pasta to absorb the flavors.
