Ingredients

Pasta & Sauce:

  • 8 oz (225g) pasta (fettuccine, penne, or rigatoni)
  • 1 cup (240ml) heavy cream
  • 4 oz (115g) Gorgonzola cheese, crumbled
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • ¼ cup (60ml) white wine (optional)
  • ½ cup (50g) grated Parmesan cheese
  • ¼ tsp salt (adjust as needed)
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Garnish & Extras:

  • ¼ cup chopped fresh parsley
  • ¼ cup toasted walnuts (optional)
  • Extra Parmesan cheese, for topping

Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook until al dente, following the package instructions.
  3. Reserve ½ cup of pasta water, then drain and set pasta aside.

2. Prepare the Gorgonzola Sauce

  1. In a large skillet over medium heat, melt the butter until slightly bubbling.
  2. Add the minced garlic and cook for 30 seconds, stirring frequently.
  3. If using, pour in the white wine and let it simmer for 1-2 minutes until reduced.

3. Make the Creamy Cheese Sauce

  1. Reduce the heat to low and stir in the heavy cream.
  2. Add the crumbled Gorgonzola cheese, stirring until fully melted.
  3. Mix in the Parmesan cheese, salt, and black pepper.
  4. If the sauce is too thick, gradually add reserved pasta water until smooth.

4. Combine & Serve

  1. Add the cooked pasta to the sauce, tossing to coat evenly.
  2. Let it simmer for 1-2 minutes, allowing the pasta to absorb the flavors.
  3. Remove from heat and top with chopped parsley, toasted walnuts, and extra Parmesan if desired.
  4. Serve immediately while warm and creamy.

Notes

  • Pasta Choices: Long pasta (fettuccine, linguine) works well for a silky texture, while short pasta (penne, rigatoni) holds the sauce beautifully.
  • Dairy-Free Alternative: Substitute coconut cream or cashew cream for heavy cream and use a dairy-free blue cheese alternative.
  • Extra Creaminess: Add a splash of whole milk or an extra tablespoon of butter if you prefer a silkier sauce.
  • Nut-Free Variation: Simply omit the walnuts or replace them with breadcrumbs for crunch.
