Ingredients

  • 1 lb ground pork
  • 2 tbsp apple cider vinegar
  • 2 tbsp chili powder
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Combine Spices: Mix all dry spices in a small bowl.
  2. Mix Meat: Add vinegar and spices to ground pork; mix well.
  3. Chill: Cover and refrigerate for at least 4 hours or overnight.
  4. Cook: Brown chorizo in a skillet over medium heat for 8–10 minutes.
  5. Serve: Use in tacos, eggs, or your favorite dish.

Freeze extra portions for up to 3 months. Adjust chili and cayenne to your preferred heat level.
