Description

Homemade Mexican Chorizo is a richly seasoned, spiced, and flavorful sausage that’s perfect for tacos, breakfast burritos, or as a base for soups and stews. This versatile recipe lets you adjust the spice level to your taste, ensuring a delicious and customizable chorizo that’s better than store-bought!

Ingredients

Scale
  • 1 pound ground pork (or ground chicken/turkey for a lighter option)
  • 3 tablespoons red chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 3 garlic cloves, minced
  • 2 tablespoons white vinegar
  • 1 tablespoon olive oil

Instructions

  1. In a large mixing bowl, combine the ground pork, chili powder, smoked paprika, cumin, coriander, oregano, salt, black pepper, and cinnamon.
  2. Add the minced garlic, white vinegar, and olive oil. Mix thoroughly using your hands or a spatula until all the spices are evenly distributed.
  3. Cover the mixture and refrigerate for at least 2 hours, or overnight for the best flavor.
  4. To cook, heat a skillet over medium heat. Add the chorizo mixture and cook, breaking it into small crumbles, for about 8–10 minutes until fully cooked and browned.
  5. Use as a filling for tacos, breakfast burritos, or mix into your favorite dishes for an authentic Mexican touch.

Notes

  • Adjust the chili powder to make the chorizo spicier or milder.
  • Substitute white vinegar with apple cider vinegar for a tangier flavor.
  • For storage, freeze uncooked chorizo in portions for up to 3 months.
