Description

This traditional Southern hog head cheese is a savory, set meat jelly that’s rich in flavor and perfect for slicing, snacking, or sandwiches.


Ingredients

Scale
  • 1 whole pig’s head (halved)
  • 2 cloves garlic
  • 2 onions, chopped
  • 1 cup celery, chopped
  • 1 bell pepper, diced
  • 1 tbsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tsp paprika
  • 1/4 cup white vinegar
  • 1 packet unflavored gelatin (optional)

Instructions

  1. Clean Pig Head: Rinse and scrub thoroughly, removing any hairs.
  2. Boil: Cover with water in a large pot and simmer 3–4 hours.
  3. Shred Meat: Cool slightly, then pull meat off bones. Reserve broth.
  4. Cook Veggies: Sauté garlic, onion, celery, and bell pepper until soft.
  5. Mix Together: Combine shredded meat, veggies, spices, vinegar, and broth. Simmer.
  6. Test Consistency: Add gelatin if needed.
  7. Set in Mold: Pour into molds and refrigerate overnight.
  8. Slice and Serve: Chill until firm. Serve cold.
