Ingredients
- 1 ½ cups graham cracker crumbs
- 1 ¼ cups granulated sugar (divided)
- 6 tbsp + ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 3 cups peeled and sliced apples
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- 2 tbsp all-purpose flour
- ½ cup heavy cream
- 1 tsp sea salt
Instructions
- Mix graham crumbs, sugar, and melted butter. Press into springform pan and bake briefly.
- Toss apples with brown sugar, cinnamon, and flour. Spread over crust.
- Beat cream cheese and sugar until smooth. Add eggs, vanilla, sour cream. Pour over apples.
- Bake at 325°F until set. Cool completely and refrigerate 4+ hours.
- Melt sugar until amber. Stir in butter, then cream and salt to make caramel.
- Drizzle cooled caramel over chilled cheesecake and serve.
