- ½ cup tamarind juice (filtered)
- 2–3 tablespoons jaggery (crumbled or chopped)
- 1 teaspoon ground cumin
- ½–1 teaspoon Kashmiri chili powder or paprika
- Pinch of salt
Instructions
- Soak Tamarind: If using a tamarind block, soak it in warm water for 10–15 minutes. Strain to get about ½ cup juice.
- Heat Base: Pour juice into a saucepan over medium heat.
- Sweeten: Stir in jaggery until fully dissolved.
- Spice It Up: Add cumin, chili/paprika, and salt. Stir well.
- Simmer: Let sauce cook on low for 10–15 minutes until thickened.
- Adjust: Taste and adjust sweetness or heat as needed.
- Cool & Store: Let cool before storing in a jar. Refrigerate up to 2 weeks.
